Chocolate coffee cake - simple and with a strong flavour

Are you looking for a dessert that combines rich flavour, light texture and simple preparation? This chocolate coffee cake is the perfect solution. It's perfect for a leisurely breakfast, lunch or dessert with a cup of coffee. What's more, the recipe is not only simple, it's also butter-free - which makes the cake lighter without sacrificing rich flavour.

The recipe is based on Corsini Colombia coffee - an aromatic and balanced coffee with light fruity and caramel notes that perfectly complement the intensity of the dark chocolate. This combination gives the cake a special depth and sophistication.

Ingredients

  • 80 g sugar
  • 2 eggs
  • 75 g sunflower oil (or vegetable oil)
  • 1 cup cooled Corsini Colombia coffee (about 100 ml)
  • 85 g milk (or lactose-free milk)
  • 170 g of flour
  • 1 packet baking powder
  • 100 g dark chocolate chips

Preparation

  1. First, make the coffee and let it cool completely.
  2. In a large bowl, beat the eggs with the sugar until light and fluffy.
  3. Add the oil, milk and cooled coffee. Mix everything thoroughly.

4. Sift the flour with the baking powder and add to the liquid ingredients. Stir until smooth and homogeneous, without lumps.

5. Stir in the dark chocolate chips, using a spatula and stirring from the bottom up.
6. Prepare a cake tin (about 20 cm in diameter), line it with baking paper and pour the prepared batter into it.
7. Bake in a preheated oven at 180 °C for about 30-35 minutes.
8.Check for doneness with a toothpick - if it comes out dry, the cake is ready. If there is batter left on it, bake for a few more minutes.
