Ingredients (for about 8 pancakes)

 
  • 50 g sugar
  • 1 egg
  • 200 g decaffeinated coffee
  • 50 g milk
  • 200 g wheat flour
  • 1 teaspoon baking powder

Preparation:

1. First, make the coffee. While the coffee is cooling, start preparing the dough.

2. Mix the sugar and egg in a bowl and whisk until the mixture becomes light and fluffy.

3. Mix the milk with the cooled coffee in a cup. Add this to the egg and sugar mixture and mix thoroughly.

4. Add the sifted flour and baking powder. Mix until the dough becomes smooth and lump-free.

5. Grease the pan with a small piece of butter and wipe off any excess with a paper towel. Then place one spoonful of batter in the center of the pan.

6. Cook over low heat until bubbles form on the surface. Turn with a spatula and cook for another 1–2 minutes.

7. Repeat until the batter is used up. The ingredients listed are enough for about 7–8 pancakes.

You can also prepare coffee pancakes the night before – store them in the refrigerator until serving and gently reheat them in a pan before eating.
