The Role of Coffee in Desserts

Coffee adds not only aroma but also balance to desserts. It helps cut through excessive sweetness and adds depth to the flavor.
By using high-quality 100% Arabica coffee, you can enjoy:

  • a balanced flavor profile
  • a distinct yet delicate aroma
  • a pleasant aftertaste

In this recipe, coffee is an essential ingredient that contributes to the overall taste experience.

Ingredients (for 6–7 muffins)

For the muffins:

  • 100 g wheat flour
  • 80 g potato starch
  • 80 g sugar
  • 3 eggs
  • 2 tablespoons of water
  • 2 teaspoons of baking powder
  • a pinch of salt

For the coffee cream:

  • 100 g whipped cream
  • 1 cup of strong, chilled coffee

Preparation

1. Preparing the Dough

In a bowl, beat the eggs with the sugar and water until the mixture becomes light and fluffy. Add the flour, potato starch, baking powder, and salt. Mix until you have a smooth batter.

2. Baking

Pour the batter into paper cups, filling them about two-thirds full. Bake in a preheated oven at 180°C for about 20 minutes. Check for doneness with a wooden skewer.

After baking, let the muffins cool completely.

3. Making Coffee Cream

Whip the cream until it reaches a light consistency. Add the chilled coffee and gently stir until a smooth cream forms.

4. Filling and Decorating Muffins

Cut off the top of the muffin and make a small indentation in the center. Fill the indentation with coffee cream. Sprinkle the crumb mixture you set aside earlier on top to create a mimosa effect. Then decorate with chocolate eggs.

Tips for Better Results

  • It's best to make the muffins the day before-they'll be firmer
  • The coffee must be completely cooled before adding the cream
  • It is best to add the cream just before serving to preserve its texture

Recommended coffee for this recipe

To achieve a harmonious flavor, it is recommended to use a mild and aromatic coffee with low acidity:

  • India – mild and balanced
  • Brasil – with notes of nuts and cocoa
  • Guatemala – with floral and citrus notes

These types of coffee complement desserts well without overpowering their flavor.
