To achieve the perfect result, it’s important to strike a balance between sweetness, temperature, frothing, and, of course, high-quality coffee.
Ingredients for 4 servings:
- 4 fresh egg yolks
- 4 tablespoons of sugar
- 1 glass of strong coffee
It's best to use espresso to get an authentic Italian flavor.
Traditionally, people at home drank whatever coffee was available-often brewed in a moka pot. Today, espresso is both the most convenient and the best-tasting option.
Preparation:
- Make a strong cup of coffee and let it cool slightly;
- Beat the egg yolks with the sugar until the mixture becomes light in color, thick, and fluffy;
- Gradually add the coffee, continuing to whisk;
- Heat the water in a pot;
- Place the bowl of cream over hot water (in a water bath);
- Heat, stirring constantly, until the cream thickens and becomes creamy;
- Pour the prepared mixture into dessert glasses.
The coffee egg cream (Zabaglione) is ready! When serving, garnish as desired—with ground coffee, chocolate shavings, cinnamon, nuts, or crushed cookies.
Should I add some wine?
The classic version is made without alcohol—it is the most authentic.
However, if you want to add an extra touch of nuance, you can add a little Marsala wine, which imparts a subtle sweetness and a deeper flavor.
How should it be served? Hot or cold?
Traditionally, coffee egg cream is served warm, but it can also be enjoyed cold.
